Sweet Potato Fries
Really simple to make Sweet potato fries
Pre heat oven to 200C
Peel and slice sweet potatoes into long fingers
Place on a baking tray and drizzle with olive & season with salt and pepper.
Pop into the oven for at least 20mins/until soft and crispy on the edges.

Black Forest Cheese Cake
Ingredients
750g cream cheese (full/low fat)
1 cup icing sugar
1 tsp vanilla extract
200g crushed sweet biscuit, (digestives)
1 heap tbsp butter, melted
1/4 cup shaved chocolate
1 cup fresh cherries, de-seeded & cut into 1/4
Start by greasing your tin with butter or sunflower oil
Gently mix the melted butter with crushed biscuit and press into the base of the tin. Place into the fridge while preparing the rest
Into a large mixing bowl add cream cheese and mix until fluffy but not thick. Add icing sugar & vanilla extract. Mix well until mixture is stiff. Now gently fold in chopped cherries.
Press the mix gently onto the biscuit base ensuring you have reached the edges of the tin. Top with shaved, good quality chocolate. You can easily shave your own chocolate using a sharp knife. How ever if you are not confident with your skills beware as it is fiddly and can easily end in a nasty cut.
Once back in the fridge it will take no more than 2 hours to set as the cheese has been thickened through mixing.

Each burger contains
1 burger bun
1 large cos lettuce leaf
1 5oz beef pattie (burger), rubbed with BBQ sauce (before cooking)
1 Pineapple ring, drained
1 thick slice beef tomato
1 large slice tinned beetroot
Handful fried white onion, sliced thin
It's best to cook the marinaded burger on a BBQ or open flame but you can of course grill it or cook in an oven. It will take 15 - 20 mins to cook through.
Fry the onion in a little butter to colour and crisp. Soften the onions before adding 1 tbsp of butter.
Layer the burger any way you choose. I used the following order. Lettuce, Beef, pineapple, tomato, beetroot & onion.
