Strawberry Rock Buns


Makes 8

1 cup chopped fresh strawberries
2 cup all purpose flour
1/4 cup sugar
1/4 cup butter (low fat)
3/4 cup milk (low fat option)
1/4 tsp salt
2 tsp baking powder
1 tsp vanilla
Pre Heated oven 220C


Mix all dry ingredients in a large bowl.

Add milk & Vanilla and gentle mix. Mixture will be sticky.

Fold in strawberries.

Line a baking tray with baking paper and place 8 blobs of dough on.

Bake for 15 - 20mins @ 220C

Beef from the Mediterranean!


Serves 2

Ingredients:
225g lean beef, cut into strips
200g pasta
1 sliced red pepper
1/2 courgette, chopped
1/2 chopped red onion
1 chopped garlic clove
4 large chopped mushrooms
225g tin chopped tomatoes
1 tbsp tomato sauce (ketchup)

Using a wok, brown the beef with the garlic & onion. Be sure not to cook through. 4-5 mins depending on the size of the strips. Bring a pot of water to the boil and cook pasta.

Add in the peppers, courgette and mushrooms and cook for 2 mins. Leave for longer if you don't like your veg to still have a crunch. Personally I adore the crunch of peppers. Next add the tomatoes and the tomato sauce. Taste and see if it needs seasoning. Personal preference.

Mix in the cooked pasta and serve!

Oh so sweet & sour




Serves 2

Ingredients:
200g pork (I used lean pork chops)
4 spring onions (sliced at an angle)
3 pineapple rings, chopped into chunks (tinned)
100ml pineapple juice
1 red pepper
1 yellow pepper
1 clove garlic, chopped fine
1 tbsp olive oil
2 tbsp soy sauce
2 tbsp tomato sauce (ketchup)
90g noodles




In a wok, heat the oil and brown the pork in garlic. Don't cook through as the pork will be tough if you do. Add the spring onion, peppers and pineapple pieces and cook for approx. 3 mins.

Add pineapple juice and remaining ingredients and cook until the sauce thickens. You are looking for a glossy, slow running sauce. Approx. 5 mins.

Mix in cooked noodles and enjoy!

Note: Also works with chicken.

Healthy Pizza Slices


These are great for lunch. Very filling and will stop any snacking.

Serves 4

Ingredients:
4 slices of brown soda bread
1 tin chopped tomato
4-5 leaves fresh basil (dried works too)
85g low fat cheese, grated
4 chopped mushrooms
1/2 chopped red onion
pinch black ground pepper to season


Toast the bread slices lightly in normal toaster. Over the toasted bread, spread the tomatoes, mushrooms, onion and basil. If using fresh basil you can chop it and mix it through the chopped tomatoes first. Top with the cheese and season with pepper.

Place under the grill until the cheese has melted.

Serve with a fresh salad of cos lettuce, spring onion and chopped fresh tomato.

Also try adding red/green peppers & spinach
