Mango Smoothie




This is a personal favourite of mine Mrs Red Kitchen


It was the only thing I could comsume for the first 16 weeks of my first pregnancy!


This is a great breakfast. Filling and super healthy

Makes 2 - 4
(depending on serving size)


Ingredients

1 ripe Mango, peeled & sliced
125ml milk (low or full fat)
100ml natural yogurt
2 tbsp honey
Handful ice OR scoop of vanilla ice cream


Place all ingredients into a blender and pulse until smooth. Enjoy as a healthy breakfast or snack

Sometimes you just want to give your kid something you know they will eat. How about taking this well known favourite and switching the bread for a tortilla wrap?


Guacamole


Ingredients

1 ripe avocado
1 tbsp paprika
15ml lemon juice
Generous pinch salt & pepper


Mash together with a fork, or for a smooth guacamole, mix in a blender.

If you like a bit of kick, you can add 1/2 fresh chili, seeds removed and chopped fine

Conversions

Here are some conversion charts I drew up to help with your experimenting!




Chocolate Pudding


Makes 4

**Ensure ingredients are at room temperature**

Ingredients

1/4 cup butter, melted and still hot
1/2 cup sugar
1/2 cup milk
1 tsp vanilla essence
1/2 chopped walnuts
50g good quality dark chocolate, melted and at room temp
60g plain flour
4 eggs
Icing (confectioners) sugar, for dusting
Fresh whipped cream to serve


Preheat oven to 180C / 350F

Grease 4 oven proof moulds with some extra butter and sprinkle with sugar

Add melted butter to a large bowl and add flour. Stir gently into the warm butter until a smooth paste. Slowly add the milk and stir gently until smooth.

Add one egg and 3 egg yolks to the bowl. Add the melted chocolate and the walnuts.

Mix the remaining egg whites with the sugar until white and foaming. (Not stiff peaks) Add to bowl and gently mix with a large spoon

Fill each mould 3/4 of the way to the top. Place in a roasting tin partially filled with hot water. Bake in the oven for 30mins

Turn out onto plates and place in the fridge to chill. Serve dusted with icing sugar and whipped cream.


*** There may be liquid when you first turn out the pudding. Don't worry, this can simply be cleaned with some kitchen cloth before popping it into the fridge***

Chickpea Burgers


1 Courgette (Zucchini), grated
1 Carrot, peeled & grated
1 onion, finely sliced
2 Garlic cloves, crushed
2 tins chickpea, washed & drained
2 tbsp lemon juice
2 tbsp tomato ketchup
2 tbsp Worcester sauce
80g bread crumbs
1 egg
1 tbsp olive oil
Salt & Pepper


Start by frying the onion and garlic in olive oil until soft.

Into a food processor add all ingredients and blend until a textured paste.


Form into burgers with your hands

They can now be fried, grilled (BBQ) or oven cooked. Once the centre is piping hot they are cooked.

Serve on a burger bun or flour bap with a tbsp of sweet chili and a slice of beef tomato.

Waldorf Salad





Serves 4

Ingredients

2 sweet red apples, cored & chopped
2 celery sticks, washed & chopped
1/2 cup walnuts, roughly chopped
2 1/2 Low fat Mayo
Salt & Pepper


Add chopped celery and apple to a large bowl




Add walnuts, mayo and gently mix
