Chicken Cacciatore


***MUST HAVE***


Serves 4

Ingredients

1 whole chicken
2 tbsp olive oil
10 black olives, pitted & quartered
50g pancetta, diced
1 lrg onion, finely diced
125ml white wine
1 tin chopped tomatoes, drained
225ml beef stock
Salt & Pepper


Portion chicken into 8
2 wings, 2 breasts, 2 thighs, 2 legs
Season well with salt and pepper by rubbing both into the skin

In a pot, fry onion & pancetta in olive oil until onion is soft
Add chicken & brown

Add white wine and bring to boil for 2 - 3 mins

Add tomatoes & stock & bring to boil

Reduce to simmer and cook for 45 mins - 1 hour

The longer it cooks the better it tastes

Serve with mashed sweet potato and enjoy!
